Cascina Principe Vacca Description
This wine stems from the desire to offer the best Barbaresco our company vineyards can produce. It is obtained from just the best grapes of the bests of our vineyards, the so-called "Angelo". Furthermore, it is produced exclusively during the best vintages, those allowing for the utmost expression of this cultivar’s varietal characters.
As far as winemaking is concerned, the classic vinification process followed by fining in big wooden barrels is completed by a brief period of ageing in barrique in order to further enhance the gustatory complexity of this wine.
Ageing in bottle enables continual improvement of this wine’s characters over time and indeterminate longevity.
L’Angelo - Don Angelo Vacca: The vineyards that belonged to Angelo, Mario's brother, a Salesian priest, are those where the cultivation of vines is the oldest. This vineyard consisting of 3700 square meters, grafted in 2001. It includes 1580 vines of Nebbiolo from Barbaresco. Here Federico chose the best Nebbiolo clones to evaluate their oenological characteristics. Thanks to its peculiar pedoclimatic properties, it has a comparatively low production yield: every year it produces our company’s best bunches of Nebbiolo grapes.
Tasting Note: A wine with splendid ageing qualities, elegant and decided. It is bright garnet-red colour. It has spiced (cloves) and floral (violet) bouquets, with notes of vanilla, coffee and chocolate. It is full in taste, balancedly tannic, very persistent.
Wine Pairing: Roast meat, game or seasoned cheeses.
