Cà del Baio Description
For four generations Ca’ del Baio has been a family affair, as is the tradition in the Langhe. Nurtured and passed down from father to son, the vineyards surrounding the Grasso family farmhouse have been added to over time through marriage and acquisitions. The Ca’ del Baio story started out on this very vineyard, "Asili", and is on one of the best-known Crus in the Langa, and this elegant, refined wine encapsulates to perfection the precious fruit grown on our oldest vines.
The Asili cru is located in the village of Barbaresco. Spreading out around the hill of the same name, the aspects of the vineyards on the cru range from south to west, right round to north, so they are more or less suited to vine growing. Nebbiolo is the most widely-planted variety, followed by Barbera and Dolcetto. It is a prime site for the growing of Nebbiolo is the area facing south and south-west (alongside and above the Martinenga cru), and of particular interest (less warm, but more sheltered) is the large hollow linking it with the Faset cru.
Tasting Notes: colour bright garnet red, with slight orange tinges; nose intense, with fruity aromas of marasca cherries and hints of violets. Spicy notes of black pepper, liquorice and goudron; taste dry, warm and soft, showing a long, rich, smooth flavour.
Wine Pairing: Goes well with braised and stewed red meats, game and very mature cheeses. As time passes, it also becomes a great meditation wine.

The 2022 Barbaresco Asili is a rich, heady wine from Ca' del Baio. Kirsch, blood orange, mint, cinnamon and a kick of orange peel open in the glass. The more exuberant side of the year comes through in racy Barbaresco that is decidedly on the riper side, but all the elements are very nicely balanced. There's just a touch of alcoholic warmth here.
